I do. I love cookie dough.
Sometimes, cookie dough just calls to me. It finds its way into my mind and won’t go away. Not cookies, just the dough.
Sometimes, I can’t be bothered making cookies. Like late at night. I just can’t wait for the cookies to bake. I’m not very patient.
Sometimes, I can’t bake cookies. Because I know I’ll eat the whole batch.
Last night I wanted cookie dough. REALLY wanted cookie dough. Chocolate chip cookie dough, to be exact. With big, fat, chopped chunks of Cadbury MILK chocolate through it (this was no time to be fancy with that expensive semisweet business).
I didn’t want to bake cookies. And I didn’t want to make a whole batch of dough. So I broke down one of my favourite chocolate chip cookie recipes and here you have it – single serve cookie dough. Or if you decide to bake it, you’ll have single serve chocolate chip cookies. Just enough for YOU.
COOKIE DOUGH FOR ONE
This recipe has no eggs! You can eat it raw and not be afraid of bacteria or whatever it is some people are afraid of.
20g unsalted butter
2 tbsp brown sugar
1 tbsp white sugar
1 1/2 tsp applesauce
drop of vanilla
1/4 cup plain flour
1/4 tsp salt
pinch baking soda (for flavour!)
2 tbsp chocolate chunks/chips
Melt the butter in a small bowl in the microwave for about a minute. Add both the sugars to the butter and stir until well combined and smooth. Add the vanilla and applesauce and mix until combined.
Add the flour, salt and baking soda to the wet ingredients and stir until a dough forms. Mix in the chocolate chips.
Take the bowl of dough over to the couch.
Sit down.
Eat it with a spoon.
Or for cookies, bake tablespoons of dough at 180 C for 8-10 minutes.
